Extra Healthy Greek Salad

Salads are usually healthy anyway but dressing and other additions can make a salad not as healthy as you may think. Try this healthy twist on the Greek salad for a refreshing light lunch or dinner. Chickpeas add some extra protein to the salad (instead of loading up on cheese), and if you choose, reduced fat Feta cheese can make this recipe even more healthy.
Ingredients:
- 4 romaine lettuce leaves – shredded
- 4 cucumber slices- chopped or quartered
- 1.5 tbsp Balsamic Vinaigrette
- 4 red onion slices
- 1/4 cup chickpeas
- 1/4 cup crumbled Feta cheese (can use reduced fat)
- 4 pitted Kalamata olives – quartered
- 2-3 Peperoncini (optional)
Preparation:
- Combine lettuce, cucumber, onion, chickpeas, olives, peperoncini (optional) and cheese in a large bowl.
- Add salad dressing and toss
